- 16 oz can Pumpkin Puree (NOT pumpkin pie filling)
- 1 box instant, fat free vanilla pudding mix
- 1 tsp pumpkin pie spice
- 1 tsp cinnamon
- Splenda to taste (or sweetener of choice)
Mix all of these ingredients in a bowl until well blended. That's it. No, this is not a joke. The flavor is very similar to pumpkin pie in my opinion and the texture is super rich and creamy. I like to top mine with fat free whip and granola or crumbled graham crackers for a little crunch. Sometimes I even toss in a banana.
I hope you enjoy this one as much as I do. I could eat this stuff every single day!

This looks so good, Ildie! You might like the Pumpkin Whoopie Pies the Cavewoman just posted on my site, too. Though, they aren't quite as healthy as this is.
I am seriously tempted! I love easy desserts especially pumpkin ones. I am not one to labor over a pumpkin pie!
